I was skeptical about the tin lining, but after cooking a tomato sauce, I can confirm it truly stays neutral and doesn't pick up any metallic taste. The pan heats evenly across the entire surface without hot spots.
I love how the two handles make it so much easier to lift and pour without needing an oven mitt, and the tin lining really does keep acidic sauces tasting clean without any metallic aftertaste.
This pan is heavier than I expected, but the two handles make it surprisingly easy to lift and pour. The copper heats up fast and evenly, so my onions never burn.
