This is my third spider-style skimmer and the first one that doesn’t let thin spring roll bits slip through the mesh, which makes a huge difference when I’m frying in batches. The flat mesh basket is wide enough to scoop up four spring rolls at once without them slipping through, and the long handle gives me plenty of clearance from the popping oil. I've been skimming broth fat with it too, and it works just as well for that.
