The buttery shortbread base holds up so well against the lemon filling, which has just the right amount of pucker without being sour. I ate two before I even got them in the fridge.
The tart lemon filling is so bright it actually makes my mouth pucker a little, just like the real thing. That buttery shortbread crumble on top gives it the perfect texture contrast, and I've already eaten three out of the box.
The shortbread base stays buttery and crisp even after a day in the fridge, and that lemon center hits just the right sour note without being cloying. Ate one straight from the box and felt like I was back at my grandma’s kitchen table.
