The edge out of the box is scary sharp—that 13-15° grind sliced through a butternut squash like it was butter, and the AUS-8 steel hasn't dulled after a week of heavy use. The G10 handle has a nice grippy texture, even with wet hands, and the D-shape keeps my fingers from sliding forward.

That D-shaped G10 handle fits my hand like it was molded for me, and the AUS-8 steel holds an edge through a whole evening of prep without needing a touch-up. It's compact enough to feel nimble for herbs but still has that satisfying heft for breaking down small squash. Only wish I'd bought it soone
