The fat channels right off the burgers instead of pooling around them, so the patties sear instead of steaming. Cleanup's a quick wipe once it cools. My veggies came off with nice char marks too.

Didn't expect the griddle to make this much difference, but my burgers came off juicy instead of sitting in grease. Cleanup is quick too since the fat pools away from the food.
