The D3TM sharpening process shows on the first cut—this blade slid through a trout's backbone like it was butter, no sawing or forcing needed. The 5-layer steel holds a razor edge through a full day of cleaning fish, though you’ll want to hand-wash it right after.

The sandblasted frosted finish on this 6.5" blade gives it a nice grip even when my hands are wet and fishy. It flexes just right along the spine for working around bones, and the diamond-detailed edge came out of the box razor sharp.

This is the first boning knife that actually feels like an extension of my hand. The 9CR18MOV steel holds its edge through a whole salmon, and the frosted finish makes it slip through thin skin without any drag.
