The chorizo and salchichón were a nice bonus, but the real star is the paleta—at 4.5 kg it’s a hefty piece that sliced beautifully and the fat just melted on warm bread. I’ve had cheaper ibéricos before, but this one had that unmistakable acorn sweetness you can’t fake.
