The rosemary really comes through without overpowering the sheep's milk, and the texture is firm enough to slice thin for a tapas board. I've already gone through half the wheel in two days, it's dangerously easy to snack on.

Bought this to go with some crusty bread and red wine after seeing the rosemary note in the description, and the cured sheep’s milk base is firm with a nice crumble. The herb isn’t overpowering, just enough to make each slice feel a little special.

The aging gives it a nice crumbly texture that I wasn’t expecting from a cured sheep’s cheese, and the rosemary is more of a subtle background note than a punch. I’d have liked a bit more salt to balance the herbal finish, but it’s solid enough for a cheese board.
